Copper cookware is the fastest, most responsive metal you can put on a burner — and also the easiest category to overpay in. Every guide here applies the same standard: cooking copper must be lined (tin or stainless steel — unlined copper is reactive and not safe for general cooking), wall thickness should sit around 2mm or more for real performance, and construction details like handles and rivets need to hold up to decades of use.
