The Mauviel M'Heritage M'250 B is the polished French alternative, while the Matfer Bourgeat Alliance 28cm is the heavier restaurant-supply option. For induction, start with the Falk Signature 2.0 24cm or compare it with the de Buyer Prima Matera. Choose Duparquet when a replaceable tin lining is the point.
This is a specification-based comparison, not a claim that we cooked with every pan. We checked current manufacturer pages and product sheets on September 4, 2026, then compared lining, copper thickness, usable size, weight, hob compatibility, care, and serviceability. Prices and availability can move, so the dated figures below are reference points rather than promises.

What makes a copper frying pan worth buying?
A serious copper pan needs more than a copper-colored exterior. Read these fields in order:
- Food-contact surface. For an everyday frying pan, choose an intact tin or stainless-steel lining. The 2022 FDA Food Code is a model retail code, not a universal home-cook law, but its Section 4-101.14 gives a useful safety boundary: it restricts copper and copper alloys in contact with foods below pH 6, naming vinegar, fruit juice, and wine. - Actual construction. Around 2mm is where substantial copper cookware begins to make practical sense; 2.5mm is a useful high-mass reference for a frying pan. Thickness is not a safety certificate or an automatic quality score, but it separates a substantial body from many thin decorative pieces. Under about 1.5mm, ask what performance the maker can document instead of assuming the color proves anything.
- Diameter and cooking surface. A 24cm or 9.5-inch rim does not mean a 24cm flat cooking area. Falk's 24cm Signature, for example, lists a 19.7cm contact area. Compare the flat base with your burner and usual food, not just the widest rim.
- Weight and handles. A responsive metal can still make a heavy pan. The checked Falk Signature 24cm weighs 1.9kg; Matfer's 28cm product sheet lists 3.089kg; de Buyer's 11-inch Prima Matera lists 4.1lb. Decide whether you can safely lift, tilt, and wash that exact weight. A helper handle matters more than a glamorous finish if two-handed handling is likely.
- Hob compatibility. Ordinary copper is not directly induction-compatible. Current induction-capable options use magnetic material in a base or multilayer structure. Verify the exact model, not merely the brand: Falk sells both non-induction Signature and induction-compatible Signature 2.0 pans, and Mauviel sells several different copper constructions.
- Care and repair. Stainless linings avoid routine re-lining. Tin is replaceable but requires lower-heat habits and nonmetal utensils. Falk Signature 24cm: best overall for non-induction stoves
Falk's current specification makes this the easiest recommendation to explain. The 24cm Signature pan is 2.5mm overall: 2.3mm of annealed copper bonded to a 0.2mm 18/8 stainless-steel lining. It has a 19.7cm cooktop contact area, weighs 1.9kg, holds 1.6L in use, and uses a cast stainless-steel handle. Falk lists gas, electric, ceramic, and halogen compatibility, a 260°C oven limit, and hand washing; it explicitly does not list induction compatibility for this range.
The satin exterior is the practical advantage over polished copper. It will still change color, but fingerprints and minor marks are less visually dominant. The stainless lining also avoids tin's empty-pan and utensil restrictions, though it does not make careless high heat useful.
At our check, Falk's page showed a €280 list price and a €224 sale price. Those figures are more useful than the old broad $250–$400 range because they identify one exact size, currency, and date. Shipping, tax, exchange rates, and promotions can change the delivered cost.
Main tradeoffs: it is heavy for a 24cm pan, the flat cooking area is smaller than the rim diameter, and it cannot go directly on induction. Falk now offers induction lines, so the old claim that de Buyer was the sole credible induction route is no longer current.
Mauviel M'Heritage M'250 B: the polished classic
Mauviel was established in Villedieu-les-Poêles, Normandy, in 1830. The current M'Heritage naming is unusually helpful: the M'250 product page identifies a 2.5mm, 90% copper and 10% stainless-steel bilaminate. The checked frying pan has a brass handle and comes in 7.8-, 10.2-, and 11.8-inch variants.
This is the choice for someone who wants polished copper and a traditional-looking brass handle as much as the 2.5mm construction. That finish also creates work: fingerprints, oxidation, and water marks are more visible than on Falk's satin exterior. Compare the handle in person if possible, especially at the larger sizes.
The page showed $480 for the selected 7.8-inch pan, $419.95 for a sold-out 10.2-inch variant, and $660 for 11.8 inches at our check. That mixed display is exactly why a generic $250–$450 range is no longer adequate. Record the exact size, current status, and checkout total before comparing it with Falk. Mauviel says this model can be used on induction with its separately sold interface disc; that is different from a pan designed to couple directly with an induction hob.

Matfer Bourgeat Alliance 28cm: the large workhorse
Matfer Bourgeat's official product sheet is refreshingly specific: its 28cm Alliance frying pan has a copper exterior, stainless-steel interior, 2.5mm body, riveted cast-iron handle, and listed net weight of 3.089kg. The sheet does not provide a retail price or induction claim.
That makes it a strong specification-led candidate, but not an automatic value winner. The old article called Matfer the least expensive route and said availability was patchy without a current price source. A safer buying method is to take product code 369028 to a current restaurant-supply seller, verify that its listing matches the manufacturer's sheet, and compare the delivered price. At more than 3kg before food, this is also the pan where a dry lift test matters most.
The utilitarian finish and cast-iron handle will suit cooks who care more about the 28cm body than polish. Cosmetic imperfections, stock patterns, and comparative cooking performance should not be inferred without inspecting the individual pan or reliable test data.
Falk Signature 2.0 and de Buyer Prima Matera for induction
Induction buyers now have at least two directly compatible, clearly specified choices.
The Falk Signature 2.0 24cm lists 1.8mm copper plus a 0.2mm stainless lining through the sides, with a 0.5mm ferritic-steel layer on the base. Falk gives 2.0mm sides, a 2.5mm base, 1.4kg weight, 19.7cm contact area, and direct induction compatibility. The page displayed €340 list and €272 sale at our check.
The de Buyer Prima Matera page lists 90% copper, 10% stainless steel, 2mm thickness, direct induction compatibility, and four diameters: 8, 9.5, 11, and 12.5 inches. Published weights are 2.9, 3.1, 4.1, and 5.3lb respectively. The page displayed $570 and marked the item sold out when checked.
These constructions are not identical to a uniform 2.5mm non-induction copper body. That is a tradeoff, not a disqualification. Compare side construction, flat-base diameter, total weight, current availability, and your induction zone's minimum and maximum pan sizes. Do not buy an adapter or interface disc without checking both the cookware and cooktop manuals.
Duparquet: traditional tin, with exact choices
Duparquet's current 11.5-inch frying-pan page replaces vague “heavy gauge” language with selectable specifications. The standard pan has 1.7mm copper; a 3.1mm version is also offered. It is 1.75 inches tall, weighs 4.4lb, has a cast-iron handle, and is hand-lined in tin. Silver lining is an optional alternative. The listed starting price was $425.
Tin gives the pan a traditional, renewable food-contact surface, but it changes how you cook. Duparquet's care page says not to preheat tin-lined copper empty, to avoid dry-heat tasks and high-heat searing, and to use wooden or silicone utensils rather than steel. It gives about 450°F as tin's melting point. Never heat a tin-lined copper pan empty. If copper-colored specks appear or the lining is worn, peeling, blistered, cracked, or pitted, stop cooking with it and have it assessed for professional re-tinning.
Duparquet's published care page gives a 10–20-year re-tinning rule of thumb based on use and mentions a quarter-sized exposed area. That is not permission to cook on smaller exposed spots: our safety rule is to stop as soon as copper shows through. See the re-tinning guide before treating future service as a minor cost.
Can a vintage pan still be the budget choice?
Yes, but only after condition and restoration costs are known. Thick French copper from an estate sale can cost less than a new premium pan, while thin decorative copper can be worthless for cooking.
Use this inspection sequence:
- identify the maker or construction marks where possible;
- confirm the interior is a food-contact lining, not lacquer or bare decorative copper;
- measure the rim and flat base, then weigh the pan;
- inspect the lining under bright light for exposed copper, peeling, pits, blisters, or cracks;
- place it on a known-flat surface and check whether the base rocks;
- ask a professional retinner for a quote before deciding the purchase is cheap.
Verdigris, the green corrosion product found on copper, is not a patina to cook through. Remove a questionable pan from food use until its material and condition are professionally assessed. Our vintage copper field guide covers the full inspection.

If a listing omits a critical field, ask the manufacturer or seller in writing. Do not fill the blank with a brand-wide assumption.
