Responsiveness — the real reason chefs still use it
Copper conducts heat far better than steel — that's established metallurgy, not marketing. In the pan, it means two things: the whole cooking surface reaches temperature quickly and evenly, and when you cut the flame, the pan actually stops cooking within seconds rather than coasting on stored heat.
If you've ever had a hollandaise scramble or caramel jump from amber to burnt in the time it took to grab the pan off the burner, you've experienced the lag copper eliminates. For sauce work, sugar work, delicate proteins, and anything cooked close to its failure point, copper's control is a genuine, repeatable advantage.
One important caveat: this only holds for real cooking copper — around 2mm wall thickness or more. Thin, shiny copper-colored pans (and copper-toned nonstick) deliver none of this. Thin copper is decorative; it heats fast but unevenly and warps easily.

Durability you never think about
Clad stainless is the closest thing cookware has to indestructible in normal use. Metal whisks, steel wool on stuck-on fond, the dishwasher, a screaming-hot empty preheat before a sear — all fine. Copper tolerates none of that casually: tin linings scratch and melt at high dry heat (tin melts around 230°C, so never preheat a tin-lined pan empty), and even stainless-lined copper shouldn't go in the dishwasher.
The non-reactive surface comes standard
This is the quiet structural difference between the two materials. Stainless steel is non-reactive on its own — tomato sauce, wine reductions, lemon, vinegar, all fine, straight from the factory.
Copper is reactive. Cooking acidic food on bare copper can leach copper into the food, which is why all cooking copper must be lined with tin or stainless steel — unlined copper is not safe for general cooking, whatever a flea-market seller tells you. Induction, ovens, and everything else
Most households now have at least one constraint copper handles poorly. Stainless works on induction; the vast majority of copper doesn't (a few makers build induction-compatible copper lines, but they're the exception and priced accordingly). Stainless goes under the broiler without a second thought. Stainless doesn't care if a house guest "helpfully" loads it in the dishwasher.
Price
There's no contest here. A genuinely excellent clad stainless skillet typically runs $60–$200 depending on brand and size; comparable-quality copper usually starts around $150–$250 and climbs well past $400 for large or heavy-gauge pieces. Prices vary by retailer, but the gap itself is consistent: copper costs roughly two to four times as much for the same slot in your kitchen. Everyday searing and sautéing
