Copper cookware runs from $40 flea-market gambles to $600 French saucepans, and the product photos all look roughly the same. The difference is in three things you often can't see in a listing: the lining, the wall thickness, and the construction. Get those right and a copper pan will outlast you. Get them wrong and you've bought expensive wall decor.
Here's the whole guide in one paragraph: buy lined copper only (tin or stainless steel — unlined copper is reactive and not safe for general cooking), aim for 2mm walls or thicker for anything that goes on a burner, and prioritize saucepans and sauté pans where copper's responsiveness pays off most. How We Evaluate Copper Cookware

- Lining first. Type (tin or stainless), and condition if it's a used piece. This is a safety question before it's a performance question.

- Construction third. Handles, rivets, rolled rims, and how the piece is put together.
- Finish last. Hammered vs. smooth, polished vs. patinated — mostly aesthetics, so it comes last.
No spec sheet tells you everything, but this order keeps you from paying for shine while ignoring the parts that cook.
Rule 1: The Lining Is Non-Negotiable
Copper is a reactive metal. In contact with acidic food — tomatoes, wine, citrus, vinegar — it can leach into what you're cooking. That's why virtually all copper made for the stove is lined with a thin layer of another metal, and why the lining is the first thing we check on any piece.
Never buy unlined copper for general cooking. Bare copper interiors belong on decor, and on a few narrow specialty pieces that tradition has carved out — jam pans used with high-sugar (not acidic) preserves, and egg-white bowls, where cooking doesn't really happen. If a modern pan is being sold as "pure uncoated copper" for everyday cooking, that's a red flag, not a feature.

Tin lining: the traditional choice
Tin is the classic lining — it bonds beautifully to copper, has a naturally slick, low-stick surface, and transfers heat with almost no interference. Vintage copper is nearly always tin-lined, and many cooks still prefer how it behaves.
The tradeoffs are real, though:
- Tin wears. With regular use, a tin lining lasts years to decades depending on care, but it eventually thins and wears through. When you can see copper showing through the tin on the cooking surface, the pan needs professional re-tinning before you cook in it again — never cook on exposed copper where the tin has worn away.
- Tin melts at high heat. Around 230°C (about 450°F), tin softens and can melt. Practically, that means no empty preheating, no screaming-hot searing, and care with broilers. Tin-lined copper is a moderate-heat instrument.
- It asks for gentler tools. Metal utensils scratch tin; wood and silicone are the habit to build.
Stainless lining: the modern default
Most new copper from the major makers is lined with a thin layer of stainless steel. Stainless is essentially permanent — it won't wear through in a home kitchen, tolerates high heat, shrugs off metal utensils, and never needs re-tinning.
The honest drawback: stainless is a slightly worse heat conductor than tin, so purists argue it dulls copper's responsiveness a touch, and food can stick to it more readily than to well-seasoned tin. For most buyers, especially first-time copper buyers, the durability is worth that trade.

Rule 2: Thickness Is Where the Performance Lives
Copper's whole pitch is heat responsiveness — it heats fast, cools fast, and spreads heat evenly, which is why saucemakers and candy cooks swear by it. But that only works with enough copper in the walls. Thin copper heats fast and unevenly, which is worse than a decent stainless-clad pan.
The working benchmarks:
- Under ~1.5mm: decorative-grade. Fine for display, planters, serving pieces. Not worth a cookware price.
- ~1.5–2mm: entry functional. Usable, but you're not getting copper's full advantage.
- ~2–2.5mm: the sweet spot. This is where serious makers build, and where copper clearly outperforms.
- ~3mm+: heavy artisan territory. Wonderful heat behavior, genuinely heavy in the hand — a large 3mm sauté pan is a two-handed lift when full.
Manufacturers who build thick tell you so, prominently — thickness is a selling point. If a listing doesn't state gauge anywhere, assume it's thin. On used pieces, check the rim: a rolled or thick rim edge is a decent field proxy, and a pan that flexes under thumb pressure is decorative, full stop. One caveat that trips people up: "copper-clad" or "copper-bottom" cookware is a different product. A thin copper layer on a stainless or aluminum body is mostly cosmetic. It's not bad cookware, but you shouldn't pay copper prices for it, and none of the thickness math above applies.
Rule 3: Construction — the Details That Predict Decades
A good copper pan is a 50-year purchase, so the fittings matter.
- Handles: Cast iron and bronze/brass are the traditional choices — they stay cooler than the pan and take abuse. Cast stainless is common on modern pieces and works well. Thin, stamped, or hollow handles on a "copper" pan usually signal a decorative build.
- Rivets: Look for solid copper or brass rivets, cleanly set, with no movement. Riveted handles outlast welded or screwed ones on cookware this heavy.
- Rims: A rolled or reinforced rim resists dents and warping and makes pouring cleaner.
- Weight check: Real copper of proper gauge is unmistakably heavy. A 2.5mm 24cm sauté pan has serious heft. If a piece feels light for its size, believe your hands over the listing.
None of these details is exotic — they're just the difference between cookware built for restaurant-adjacent duty and cookware built for photographs.
What to Buy First: Prioritizing Pieces
Copper's advantage isn't equal across the stove. Buy in the order where responsiveness pays:
- A 2–3 quart saucepan. The single best first copper purchase. Sauces, caramel, custards, rice — anywhere scorching and overshooting temperature are the enemy, copper's fast response earns its price daily.
- A sauté pan or skillet. Great second buy; precise control for pan sauces and delicate proteins. (Choose stainless-lined if you like high-heat searing.)
- A rondeau or braiser. Lovely, but a heavy investment; enameled cast iron does much of this job for less.
- Stockpots — mostly skip. A stockpot holds liquid at a simmer for hours; responsiveness is wasted, and the copper price penalty is enormous. This is the classic "looks amazing, cooks the same as a $60 pot" trap.

Brands and Price Tiers: What Money Buys
You don't need an encyclopedia of makers — the serious end of the market is small and stable.
- Mauviel (France) is the best-known name in cooking copper, with long heritage and lines at multiple thicknesses — check the gauge on the specific line, because they range from around 1.5mm up to 2.5mm.
- Falk Culinair (Belgium) builds at 2.5mm with stainless linings and a signature brushed finish; widely respected for consistency.
- Traditional artisan workshops — including well-regarded makers in France, Italy, and the US — produce heavy-gauge, often tin-lined pieces, frequently 2.5–3mm. Expect waitlists and top-tier prices, and verify specs with the maker directly.
As rough editorial ranges — prices vary by retailer, size, and line:

Vintage is the wildcard. Old French copper is often thicker than new production and can be a genuine bargain — but nearly all of it is tin-lined, and the lining condition decides everything. Budget for professional re-tinning (commonly a meaningful fraction of the pan's price) when you evaluate a vintage deal, and inspect for verdigris — the green corrosion that forms on neglected copper. Verdigris on any food-contact surface must be fully removed before the piece is used, and heavy pitting under it can be disqualifying.
One More Check: Your Stove
Copper's responsiveness shows best on gas, where flame changes translate to pan changes almost instantly — if you cook on gas, everything in this guide applies at full strength. On electric coil and radiant-glass cooktops, copper still spreads heat beautifully, but the burner itself responds slowly, so you lose some of the "turn the knob, feel the difference" magic. It's still a fine buy; just know the ceiling.
Induction is the real constraint. Copper is not magnetic, so standard copper cookware simply doesn't work on most induction hobs. A few makers now build induction-compatible copper lines with a ferromagnetic layer bonded into the base, and they perform well — but they're a distinct product, so confirm induction compatibility explicitly with the maker before buying. If your kitchen is induction-only, verify before you fall in love with a vintage pan that will never get warm on your stove.
None of this changes the lining and thickness rules; it just changes how much of copper's premium you'll actually feel day to day.
Red Flags: When to Walk Away
- No lining mentioned, or "uncoated pure copper" pitched for cooking. Reactive interior; not a cooking pan.
- No thickness stated anywhere. Serious makers advertise gauge. Silence usually means thin.
- Suspiciously light weight. Copper of real gauge is heavy. Trust the heft test.
- "Copper-colored," "copper-plated," or "copper-infused." These are different products at different (lower) fair prices.
- Vintage pieces with copper showing through the tin — priced as ready-to-use rather than as re-tinning projects.
- Lacquered interiors. Lacquer keeps display pieces shiny; it does not belong anywhere near heat or food.
So Is It Worth the Money?
For the right pieces, genuinely yes — a well-made 2.5mm saucepan is a different instrument from anything else on the stove, and it's a lifetime tool with a real repair path (re-tinning) instead of a landfill date. For the wrong pieces — stockpots, thin sets, anything unlined — the premium buys you very little. - If tin: lining intact, no copper showing through, no green verdigris
