How Thick Should Copper Cookware Be? Gauge, Performance, and the 2mm Rule

The Short Answer: Aim for 2mm or More
If you remember one number from this guide, make it this: cooking copper should be at least 2mm thick, and 2.5mm is the sweet spot. That's the gauge at which copper stops being a pretty pan and starts doing the thing you're paying for — spreading heat fast and evenly, and responding almost instantly when you change the flame.
Below roughly 1.5mm, copper is mostly cosmetic. It still looks wonderful hanging on a rack, but on the burner it behaves more like a thin aluminum pan with a copper paint job: hot spots, scorched corners in the sauce, and none of the control that makes chefs reach for copper in the first place. Above 3mm, you're into heavyweight territory — mostly vintage pieces and specialty pans that perform beautifully but demand real wrist strength.

Why Thickness Matters More Than Almost Any Other Spec
Copper's claim to fame is conductivity — it moves heat faster than any other practical cookware metal. But conductivity alone doesn't cook your food evenly. What does is the mass of conductive metal under the food, and that's a direct function of wall thickness.
Think of the pan base as a reservoir:
- Thin copper (1–1.5mm) has a small reservoir. Heat races through it, but there isn't enough metal to spread that heat sideways before it reaches the food. The result is a pan that mirrors the burner: hot ring, cool center, scorch marks that trace the flame pattern.
- Proper-gauge copper (2–2.5mm) has enough mass to even out the burner's quirks. Heat spreads laterally across the whole base, so a sauce reduces uniformly and a sear develops edge to edge. You also keep copper's signature responsiveness — take the pan off the flame and the sizzle dies almost immediately.
- Heavy copper (3mm+) evens heat superbly and holds it longer, at the cost of some responsiveness and a lot of weight. A 3mm rondeau is a two-handed lift even empty.
This is why thickness sits second only to lining in our evaluation framework — and why it's the spec most often missing from product listings for a reason. If a maker doesn't state the gauge, assume it's thin.
The Weight Reality Check
Copper is dense — noticeably denser than stainless steel and about three times denser than aluminum. Proper-gauge copper is therefore heavy, and that's actually useful when you're shopping: weight is the hardest spec to fake. A 2.5mm 28cm skillet will typically land somewhere around 2.5–3kg (5.5–6.5lb) with its handle. If a "copper" skillet that size feels like a feather, it isn't proper-gauge copper, whatever the listing says.

One honest caveat on the table: these are wall thicknesses for the copper body. On stainless-lined pans the stated gauge usually includes a thin stainless layer (a fraction of a millimeter), and on tin-lined pans the tin adds almost nothing. The tiers hold either way.
What the Big Makers Actually Build
You don't have to take thickness on faith — the reputable makers publish it, which is itself a useful signal. Mauviel's heavier M'Heritage range is built around roughly 2.5mm walls, with lighter lines around 1.5–2mm sold at friendlier prices. Worth knowing: price does not scale linearly with gauge. The jump from 1.5mm to 2.5mm can nearly double the copper in the pan, and the price follows. That's not a markup trick — it's material. Solid 2.5mm pieces from established makers typically run in the low hundreds per pan, though prices vary widely by size and retailer.
Does Thicker Always Mean Better?
No — and this is where copper shopping rewards a clear head over a maxed-out spec sheet.
Past about 2.5mm, evenness gains get small while the downsides compound. Weight climbs fast: a 3mm sauté pan full of braising liquid is a genuine two-person conversation. Response slows, too — all that thermal mass takes longer to heat up and longer to cool down, which blunts the quick-adjustment magic that justifies copper in the first place. And your stove matters: a modest home burner can struggle to push a very heavy pan through its paces, while standard copper doesn't work on induction at all without a ferromagnetic interface layer or an adapter disc.
There's also a match-the-pan-to-the-job logic:
- Saucepans benefit most from 2–2.5mm — precision and response are the whole point.
- Skillets and sauté pans are happiest at 2.5mm, where edge-to-edge searing meets manageable weight.
- Big braisers and rondeaus can justify 3mm; they sit on the heat for hours and evenness beats agility.
So the 2mm rule is a floor, not a ladder to climb as high as possible. For most kitchens, 2.5mm is where performance, weight, and price meet.
How to Check Thickness When It Isn't Listed
Product listings love the word "copper" and hate the word "millimeters." Here's how to protect yourself:
- Look for a stated gauge. Serious makers list it. "Copper construction" with no number usually means thin plate or a decorative-weight body.
- Measure the rim — carefully. Calipers on the rim give a reading, but many pans have rolled or flared rims that measure thicker than the walls. Measure a straight section if you can.
- Use weight as a proxy. Compare the listed weight against a known 2.5mm piece of similar size. Big discrepancy, thin pan.
- Beware "copper core" and "copper bottom" framing. A thin copper disc or an interior copper layer is not the same thing as a 2.5mm copper body. Those constructions can be perfectly good cookware — they're just not what this guide is about, and they shouldn't be priced as if they were.

Where Thinner Copper Is Genuinely Fine
The 2mm rule is for pans doing real stovetop work. It relaxes in a few honest cases:
- Bowls and bakeware. A copper mixing bowl for egg whites or a jam pan works the whole mass of food at once; extreme gauge matters less.
- Table service and warming pieces. A 1.5mm butter warmer or blini pan sees gentle heat and short sessions.
- Decor. Thin, lacquered, or unlined copper is fine on a shelf. Just keep the line firm: decorative copper is not cooking copper, and a thin unlined pot should never be pressed into kitchen duty no matter how charming it looks.
And one safety note that thickness can't fix: gauge tells you nothing about the lining. A magnificent 3mm pan with worn tin — bare copper showing through on the cooking surface — needs re-tinning before it touches food, because unlined copper is reactive and not safe for cooking, especially anything acidic. Thickness and lining are separate checks; a pan needs to pass both.
The Bottom Line
Thickness is the least glamorous spec on a copper pan and the most predictive of how it will cook.
